The Gluten Free Goose opened their doors on March 25 near the town of Nolensville offering the community a bakery that is 100% gluten free
Located at 6601 Sugar Valley Drive, Suite 115, the bakery had to close early on opening day due to the demand for their cakes, cookies and more.
Music industry veteran, entrepreneur, and Gluten Free Goose owner Amy Cornell (née Decker) moved to Nashville almost four years ago and there was not a gluten free bakery that offered what she was looking for and needed.
Amy started testing recipes for several years before making the decision to open the bakery. The Gluten Free Goose has proven what she had hoped for, desserts like pastries, decadent desserts that in her words, ‘taste normal.’
“When I first moved to Nashville, I couldn’t find a 100% gluten-free bakery to safely satisfy my sweet tooth,” Cornell said. “Baking is in my DNA. My mom and grandmother were home bakers, and I grew up baking.
“So, after being diagnosed with Celiac’s disease, I embarked on a journey to perfect converting my favorite pastries and desserts to gluten-free. Thus, The Gluten-Free Goose was born. This bakery will be for everyone, not just those who follow a gluten-free diet.”
Amy’s husband Peter Cornell is a rock-and-roll musician who curated amazing coffee inside Oh My Chive in Nolensville. Cornell Brothers Coffee gave Amy the opportunity to sell some of her baked goods and the response was favorable with products selling out. She knew there was a need and who does not love something sweet when sipping on a great cup of coffee.
During the soft opening, the bakery held tastings on Friday’s. People stood in line just to sample the desserts. Believing that the sweetest things in life are the simplest — time spent with family, friends, baking, and giving back to community Amy’s new bakery offers the community something that was needed.
The bakery is 100% certified gluten-free by the Gluten-Free Food Program Inc., which is endorsed by the National Celiac Association.
How did Amy decide on the name? Goose has been her son’s nickname since birth and Amy says, “Everything I do is for him, plus it is just a cute name.”
Gluten-Free Goose features a wide selection of delectable desserts, baked goods, including vegan and dairy-free options without compromising taste or quality.
Specifically, the bakery will offer seasonal menus curated by esteemed pastry chefs Eun young (Jubi) Lee and Caitlyn Rau. Lead Pastry Chef Lee, who graduated from Johnson & Wales University, honed her pastry chef skills at several high-end hotels, including the acclaimed Four Seasons Hotel.
“We are laboring over the ingredients and use such precision crafting each and every dessert. I can’t wait to see people’s faces when they try something new and the relief they will have knowing they won’t get sick from gluten,” says Amy.
